After the heritage breed pork bellies are transformed into Baker’s Dry Cured, Double Smoked slabs of bacon, they are vacuum sealed in “cook-in” bags — hence the name “Under Pressure.” Then, they’re slow cooked in a water bath at a precise low temperature for up to 24 hours. This gentle cooking fully cooks the bacon without rendering the fat or drying out the meat, resulting in an incredibly tender, almost spreadable texture that’s soft enough to cut with a fork. Simply delicious.
