Simple to prepare, the Florentine steak, or bistecca alla Fiorentina, is a classical Tuscan dish with a rich history, possibly originating in the 1500s. It is easy to replicate this classic Italian dish at home when you start with our highly marbled, thick-cut Dry-aged USDA Prime Porterhouse. This steak has been carefully dry-aged in our custom aging coolers for a minimum of 30 days, creating a tender texture and concentrated beefy flavor. True Florentines grill bistecca alla Fiorentina quickly over an open flame creating a crusty brown exterior and a rare interior, never medium or well-done, but go ahead and grill it to your liking (we prefer medium-rare). Then simply drizzle with extra virgin olive oil, rosemary, and salt.
