Fresh Black Summer Truffles

Fresh Black Summer Truffles have a light and fleeting aroma of mushrooms and damp earth, and a delicate mouthwatering sweetness, resembling hazelnut. Since the summer truffle has a more delicate flavor than other truffles, to bring out the aroma, gently sauté the whole truffle in little a good olive oil on low heat in a pan. Avoid using in dishes that will be cooked. Shave thin slices of the warmed truffle onto cooked dishes to finish them. A little goes a long way! Season: May - September.

We recommend using a truffle shaver but a mandoline or sharp vegetable peeler can also be used.
