Our USDA Prime meats are all hand selected from the highest possible grade of grain fed, pasture raised superior beef. We then wet-age our steaks in vacuum-sealed bags under controlled conditions that prevent moisture from evaporating. This aging process breaks down the meat's complex proteins from the inside out, producing meat that is even more tender, sweet, and juicy.
